Easy Pasta with Peas & Salmon
A Quick, Healthy Lunch That Only Uses One Pot

Ingredients
4 oz Small Pasta (Ravioli, Farfalle, Gnocchi)
2 oz Salmon (Pre-Cooked or Smoked)
1/3 Cup Frozen Peas
Optional Garnishes
Grated Parmesan
Parsley
Lemon Zest
Crushed Red Pepper Flakes
From the Pantry
Extra Virgin Olive Oil
Kosher Salt
Fresh Ground Black Pepper
Steps
Boil salted water in a large pasta pot.
Add the pasta and cook according to the directions.
Two minutes before the pasta is done add flaked salmon and frozen peas.
Drain and rinse quickly with cold water.
Add to a bowl and top with a drizzle of olive oil, fresh ground pepper, kosher salt and optional garnishes. Toss to combine and enjoy!
Kitchen Acumen Tips:
This feels like such a treat but is so easy to make it’s hard to believe. I love making this with Trader Joe’s Ricotta and Lemon Zest ravioli. It’s the perfect size for me and my husband.
For the fish, I use smoked salmon which imparts a rich, smoky flavor to this easy and light pasta. I’ve also used cold salmon I set aside from the night before which works well too. If using canned salmon, I wouldn’t add to the pot but top the cooked peas and noodles with a spoonful as you plate it.
Work from home lunch doesn’t get much better than this!
