Easy Pasta with Peas & Salmon

A Quick, Healthy Lunch That Only Uses One Pot

Just the Recipe | 1 Serving

Ingredients

4 oz Small Pasta (Ravioli, Farfalle, Gnocchi)

2 oz Salmon (Pre-Cooked or Smoked)

1/3 Cup Frozen Peas

Optional Garnishes

Grated Parmesan

Parsley

Lemon Zest

Crushed Red Pepper Flakes

From the Pantry

Extra Virgin Olive Oil

Kosher Salt

Fresh Ground Black Pepper

Steps

  • Boil salted water in a large pasta pot.

  • Add the pasta and cook according to the directions.

  • Two minutes before the pasta is done add flaked salmon and frozen peas.

  • Drain and rinse quickly with cold water.

  • Add to a bowl and top with a drizzle of olive oil, fresh ground pepper, kosher salt and optional garnishes. Toss to combine and enjoy!


 

Kitchen Acumen Tips:

  • This feels like such a treat but is so easy to make it’s hard to believe. I love making this with Trader Joe’s Ricotta and Lemon Zest ravioli. It’s the perfect size for me and my husband.

  • For the fish, I use smoked salmon which imparts a rich, smoky flavor to this easy and light pasta. I’ve also used cold salmon I set aside from the night before which works well too. If using canned salmon, I wouldn’t add to the pot but top the cooked peas and noodles with a spoonful as you plate it.

  • Work from home lunch doesn’t get much better than this!
