Instant Pot Steel Cut Oatmeal

Just the Recipe | 6 Servings

Ingredients

2-3 TBS Unsalted Butter

2 Cups Steel Cut Oats

6 Cups Water

Optional Mix-Ins (see tips)

From the Pantry

Kosher Salt

Steps

  • Toast the oats:

    • Turn the Instant Pot (IP) on to Sauté and melt the butter.

    • When the butter is melted add the oats, a pinch of salt and any spices you’re mixing in. Stir.

    • Sauté for 3-5 minutes, stirring often until lightly toasted.

    • Press cancel.

  • Add the water and cook:

    • Add the water and stir to combine.

    • At this point, add in any additional mix-ins. Stir well.

    • Close the IP and set the lid to ‘Sealing’ using the pressure release valve. Select the “Porridge” setting and set the cook time for 12 minutes at high pressure.

  • Pressure release: Natural release for 10 minutes. Then vent any remaining steam.

  • Open and stir to mix in any liquid that is sitting on top.

Serve warm with brown sugar or maple syrup and cream.


 

Meal Block Plan | 6 Breakfasts

  • Store in a container (or divide into six single serving containers) and refrigerate for up to 5 days.

  • Reheat in the microwave with 1-2 TBS of milk for 60-90 seconds on high. Stir and top with cinnamon, syrup, nuts, and/or fresh fruit as desired.

 

#Kitchen Acumen Tips:

  • Use traditional Steel Cut Oat, not a quick cooking version.

  • Flavor Combination Ideas:

    • Pumpkin pecan: add 1 Cup Pumpkin Puree + 1 tsp Pie Spice; top with chopped pecans and additional cinnamon

    • Banana walnut: add 1 to 2 bananas sliced; top with chopped walnuts

    • Blueberry almond: add 1 cup of fresh or frozen blueberries; top with almond slices and cream

    • Apple cinnamon: add 1 apple, cored and diced + 1 tsp Pie Spice or cinnamon

    • Apple Cranberry (shown above): add 1 apple, cored and diced + 1 cup fresh or frozen cranberries + 1/2 tsp Pie Spice

    • Peaches & Cream: add 1-2 Cups Peach Slices (you can also add these after cooking); top with whole milk or cream

    • Cherry Walnut: add a cup of frozen or dried cherries; top with chopped walnuts
