Kitchen Acumen Tips:
It is a light-bulb moment when you realize that you have all the ingredients to make pie spice already in your spice drawer. Instead of letting that ground allspice you bought for a jerk chicken recipe fade in flavor while buying a new jar of pie spice each fall, use it! Spices don’t stay fresh forever. Use them!
The great thing about making your own pie spice is that you can tweak it to suit your personal preferences. For example, I add a little bit more fresh ground nutmeg to my mix.
You can also add in a little ground mace or anise, if you like those flavors.
If you don’t have access to good spices, try ordering online. Penzey’s is my go-to spice shop. Penzey’s always has a good deal and they send samples for you to try as well.
